So it seems like there was a read-along storybook and CD for the movie, but I have no idea about what these kind of things are like.
Is it sorta like a novel? Or just a really, really simplified summary like a children's story?

I'm afraid I don't have it and don't know much about it, but Truttle listed it among his collection in this thread; if he still has it, perhaps he can tell you about it. Amazon.com says it's 64 pages long, which surprises me, as the old Read-Aloud Storybooks I had as a kid were only 20-some pages long, if I recall. The stories were pretty condensed and simplified back then, but maybe they're more detailed now?

I have said item in my collection as well, although I've never opened mine. It's still in its original packaging.
Basically you place the CD in a CD player and you'll have a narrator narrate the storybook word for word. The gimmick is that you read along to the story along with the narrator, having someone read it aloud for you. Some of them though have the voice actors themselves speaking out the dialogue their respective characters say in the storybook.
Like Epesi said, it's a condensed and simplified version of the story. Sometimes the lines are different from the movie, but it's generally a less-detailed version of the plot.

Right; my old 101 Dalmatians book went all out with voice actors (fairly close imitations of the originals), music and sound effects. But I don't know if the newer books have the same production quality. Apparently there was a second version of the 101 Dalmatians storybook released in 1999, which appears to be considerably longer than mine but apparently only has one narrator (Martin Jarvis), according to Amazon. I've been wondering if Brother Bear is the same way.
